Easy fruit salad
This is more about the picture because it is way too easy to call a recipe. Isn't it pretty?
So just take what ever fruit is in season. Wash is really well and slice it if needed. Put it in a pretty bowl. I like to save out a cup or so and run the immersion blender over it. Drizzle that over the top as a quick garnish.
I Used mango, blue berry, and black berries. You are only limited by your own imagination. If you feel like fruit and you are watching your sugar peel, seed, and slice a cucumber and add to the mix. Sometimes a drizzle of coconut milk is nice too.

Easy Fruit Salad

That is what Jim said when we dug into our Bountiful basket (thanks mom and Katie) and saw 21 yellow onions and .... wait for it.... 6 more Mangoes!!!!
Jim hates onions and he is beginning to get sick of all my attempts to Cook with mango. hee hee.
See how big and beautiful they are?
I thought it may be worth showing how to cut a mango. Mangoes have a really large flat seed inside and the fruit doesn't pull off of it like other fruits. So the best thing is to cut it out. Just slice the mango down the middle.
Use your knife to cut cubes into the mango, taking care not to cut through the skin. Then push the skin like you are folding a sock. Cut the little cubes off and toss the skin.
Fruit Salad
ingredients:
1 mango
1 pineapple
1/2 honey dew
fresh mint
Cut mango, honeydew, and pineapple into cubes all the same size. Finely chop the mint. Toss all ingredients in a medium bowl. Make sure to be careful not to squish the fruit.
This is a beautiful and tasty dessert. It is really hitting the spot on these hot afternoons we have been having.
Didn't it turn out pretty? Something about the mint makes this really lovely.

Egg Salad
Are you hungry and in need of some Fast food???
This is actually my daughters new favorite dish. She is only 11, but already amazing in the kitchen. I think she is on to something with this one!
Ingredients:
greens
feta cheese
walnuts
cranberries
egg
vinaigrette
Take the greens and toss them with feta, walnuts, cranberries, and dressing of your choice. Place in a bowl and set aside. Fry an egg in bacon fat. Add a little salt and pepper. Place egg on top of the greens and enjoy!

Spicy Jicama Salad
I have been having a bit of a sweet tooth lately. It is spring and everything is super fresh at the market so a fruit salad seemed to be a no brainer.
This one has a bit less sugar then the normal family reunion fruit salad with a spicy twist.
Jicama! If you haven't used a Jicama before do not be afraid. They are a large root vegetable that comes from Mexico. They taste really mild and so they go with almost anything.
The skin of the Jicama is really quite tough so you almost have to cut it off with a knife. It smells sweet and fresh inside. Jim says it doesn't taste like anything. I think it tastes like fresh peas from the garden.
Ingredients:
1 Jicama
2 apples
pineapple
1 large cucumber
1-2 C. blueberries
1 bunch of grapes
1 lemon
1 t. chili powder
fresh ginger root
1 t. cinnamon
a dash of sea salt
Cube the jicama, apple, cucumber, and pineapple. Leave the apple peal because it is pretty. Mix in a large bowl. Cut the skin off the ginger root and run it through a garlic press right into the bowl. Add chili powder, cinnamon, and salt. Mix it up a bit. Add blueberries, grapes, and lemon juice. Gently fold together so you don't crush the blueberries.
I just think this turned out so pretty! Everyone thought the jicama was apple.... and I didn't say a word.
